Are Opaleye good to eat?
Opaleye are probably the best tasting out of the lot, compared to shiners and butterlips, but the difference is not that big. I’ve made great ceviche out of perch, too. Calicos are much tougher fish to nab than perch. But to me, when grilled, they taste almost exactly the same!
